Yesterday all of us (
me , husband, son and my younger sister ) went to Hypercity mall at
Whitefield, Bangalore to fetch our monthly food supplies which are rare
to get in our nearby stores. It’s my favorite food mart under a single roof in the city. Moreover, I make it a
point to visit this place to get my exotic veggies, herbs and spices to
carry on posting my varied recipes. The best part about this place is
that you have enough space to prevent jostling
for space with each other. And the people who visit there know what
they want to buy and not just browse around aimlessly. Between
ourselves, I would not be surprised if many of the foodies or food
bloggers get their food stuff regularly from there :-).
Ingredients:
1 cup Corns (Remove husks and slice kernels from the Cobs)
3 Spring Onions (only green part)
2 1/2 cups Water or you can use vegetable broth
4-5 Garlic pods, finely chopped
1/2 tsp chopped Ginger
1 green chilly, finely chopped
3 tbsp Butter
Pepper as required
Salt to taste
Method:
Add corns in a large pot, bring to a boil on medium heat, reduce heat and simmer for 1/2 hour. Let this cool down.
Add little water in a blender and grind them to make a paste (you can have coarse or very smooth texture according to your taste preference). Grinding them to paste takes time so have patience. Keep aside.
Melt butter in a large pan on medium heat. Add spring onions, garlic, ginger, few corn kernels. Sprinkle some salt, pepper and saute until translucent. Add corn paste, water and mix everything well. Let this heat on high flame till first boil comes,season with salt and pepper. Cook until it reaches the kind of consistency you like. Remove and serve in soup bowls. Garnish with black pepper and scallion.
Notes:
- Vegetable stock can be made by adding 6 cups Water +3 Onions+ 1 cup Celery+ 1cup Carrots + 1/2 cup French beans+6-7 Garlic pods ,some pepper corns and bay leaves. This stock should simmer for 45 minutes to an hour. Strain out the vegetables and bay leaves. Your vegetable stock is ready !!
- To make the soup more creamy you can add 1 1/2 cut water and 1 cup of milk.
