Well, how time flies. It seems just yesterday that I learnt to prepare rotis ( flat breads ) only after my marriage from my maid servant. And now I don't shy away from making chapatis, parathas and what not with flour ! The main motive behind food blogging is to share with everyone the tasty dishes with which you could create a smile in the people you care about. This cheese capsicum pocket is a great snack as they are best consumed during evening with a cuppa. As there is cheese fillings it takes care of the hunger between lunchtime and dinner. Tried it out with my guests many times who seemed to love the taste. Hope you too like them.
Ingredients:
1 cup Mozzarella cheese, grated
1/4 cup chopped Capsicum
1-2 Green chillies, diced
1/4 cup grated Carrot
1/4 tsp of Pepper powder
1/4 tsp Oregano
1/4 tsp Chilly flakes
Salt to taste
For outer coating:
2 cups All purpose flour
Pinch of Baking powder
Pinch of Ajwain (carrom seeds)
3 tbsp melted ghee
1/2 cup Warm water( or may be little more than that)
Pinch of Salt
Oil for deep frying
Method:
First take a mixing bowl and put together all dry ingredients, add ghee and mix thoroughly. Add water little by little and make a soft, pliable dough. Cover the dough with a damp cloth, then with a large utensil and let it sit for 20 minutes.
For the stuffing put all the ingredients in a large bowl and mix well. Now divide the dough into two equal parts, roll it into a 8 "diameter circle. Cut into 3" squares from that rolled dough. You will get approximately 6 squares, cut off excess dough and save it for later use. Place the cut out squares on parchment paper or any other non stick surface. Cover with damp cloth otherwise dough will become dry. Repeat this process till you get all in pairs.
Now pour 1 tbsp cheese mixture over one square and wet the edges by dipping index finger in water. Place the other square over it and sea the edges by gently pressing it down. Now take a fork and slightly press it on the edges to give the final touch.
Heat oil in skillet and slid 2-3 cheese pockets and deep fry till golden brown. Do that in batches and place them on paper tissue to soak the excess oil. You can serve them with ketchup or have it just like that.
You can also Bake them instead of deep frying. Just place an aluminium foil on tray and brush the cheese-capsicum pockets with butter and bake at 160 Degrees Celsius for 10-12 minutes, until light browned.
