With the Holiday Season starting from Christmas knocking on the doors, I thought let me also warm up with all my efforts for this season till the year end. I have made a modest preparation of double chocolate chips cupcakes which is appropriate for the winter. Also, I have noticed that whenever I have guests during evening time, this became the topic for the evening and handy as a filler. So, in the next few weeks I would be posting few Christmas special goodies. Watch this space..
Ingredients:
1 +1/4 cups All purpose Flour
1/4 cup Cocoa powder (dutch process)
100 gms Dark Chocolate, break it into small pieces
1+ 1/4 cups Brown sugar
2 Eggs, room temperature
1/2 cup Oil
1 cup Boiling water
1 cup mini Chocolate chips
2 tsp Chocolate essence
1 tsp Baking powder
1/2 tsp Baking soda
Pinch of salt
Method:
Pre-heat the Oven to 180 Degree Celsius. Line the cupcake tray with the cup liners. Add chocolate pieces in a microwave proof bowl and heat it for 30 seconds on medium power. Remove and stir, if the chocolate is not melted, returned to microwave and repeat the process. Set aside to cool.
In a large mixing bowl sift together all the dry ingredients. In another bowl, beat one egg at a time with blender till it is fluffy, then add another. Add all the wet ingredients in it EXCEPT WATER and beat well. Slowly pour dry ingredients, chocolate chips and melted chocolate and stir well. Finally pour boiling water to your batter and blend it for a minute. MIND it the batter will be runny, so don't faint !!
Spoon the mixture into prepared tins (they swell beautifully so fill only 3/4) and bake for 25-30 minutes or until a toothpick inserted in the middle of a cupcakes comes out clean : it is done ! Remove from Oven and cool on wire racks.
