Baked Chicken in Aluminium Foil

                         
My son loves the sight of roasted chicken and he doesn't watch T.v also for any distraction that time. So sharing this baked chicken wrapped in foil which stays much softer and it is cooked basically in its own juice. I team up the small chicken pieces with fresh vegetables and viola the taste is awesome! So just let your taste buds to guide you and  you will have lots of options for many nights of chicken variety.


Ingredients:
5-6 pieces of Chicken (size 1-1 1/2")
Few broccoli florets
2-3 baby Carrots, cut into small bites
6-7 baby Onions
4-5 baby French beans
1/2 Capsicum, diced
5-6 Mushroom , cut into halves
1 Potato cut into lengthwise
2 tsp minced Ginger
4-5 Garlic, chopped
1 tbsp Dark Soya sauce
1 tsp Brown sugar
 1 tsp Dry Parsley
1 tsp Oregano
2 tbsp Olive oil
Few slices of lemon
Salt and Pepper to taste

Method:
In a mixing bowl, combine everything well so that the chicken pieces are coated nicely with the herbs and spices.

 Pour olive oil and paprika if you want it little spicy, mix well. Transfer it into an aluminium foil container , cover and refrigerate to marinate for 2 hours.

Pre-heat Oven to 400 Degrees and place this covered foil container on middle rack. Bake for 35-40 minutes or until chicken is cooked through. With great care take out the cover of container (avoid steam when you remove it !) and broil for another 5-6 minutes to get that nice and crispy skin.

  2. i always do my chicken this way. But i use a normal casserole dish, place a silver foil in it long enough to wrap and then place the chicken and accompaniments in it. Wrap it up nicely and bake. last half hour i open the foil and let it bake so any extra gravy is all nicely absorbed and juicy :)
    I like the spices you have used, very italian :)
