This is a timeless and ever popular Indo Chinese chicken dish which is relished by old and young alike. Chilli Chicken can be prepared in either dry form or in gravy form depending on the required taste of the person. During the course of time, this dish has transcended all geographical boundaries and is found in each and every city of the world. Apart from Indo Chinese restaurants , it has gained acceptance in various households. My friends relish this dish when they visit my place for lunch or dinner. So here goes:
Ingredients:
To Marinate the Chicken
1/2 kg Chicken, cut into 1 1/2 inch
2 tbsp Cornflour
1 tbsp All purpose flour
2 tsp Soya sauce
2 tsp vinegar
1" inch Ginger, finely chopped and crushed
8-9 Garlic pods, finely chopped and crushed
1 tsp Chilly sauce
1 tsp Salt
2 tsp Green chilly paste
1 tsp Salt or adjust according to your taste
Pinch of pepper powder
For the Masala:
4-5 Onions, cut into thin long slices
1 big Capsicum,deseed & cut into thin long slices
3-4 Green chillies, slit vertically
4-5 Garlic pods, finely chopped
1 tsp Salt or adjust according to taste
1/2 tsp Black pepper powder
1 Whole red chillie, deseed and chop finely
1 Green onion, finely chopped
For the Sauce:
1/2 cup Tomato sauce
2 tbsp chilly sauce
2 tsp Vinegar
1 tsp Soya sauce
2 tsp Cornflour, dilute in little water
1/4 cup Water
Other than the above ingredients, 2 tbsp oil for deep frying chicken and for garnishing 2 green onions, thinly cut lengthwise.
Method:
After washing chicken pieces, pat dry and transfer in a big bowl. Mix all the ingredients as per marination list.
Mix until all the pieces are coated well with the spices. Cover and keep this aside for 2 hours.
Heat oil in a pan and add marinated chicken pieces in batches to fry. Fry the pieces on medium heat till they are golden brown and keep aside.
In the remaining oil add red chillies, green onions, green chillies, onion, capsicum, little salt and saute till they become tender.
Simultaneously prepare sauce by mixing all the ingredients under 'sauce'.
Now add the fried chicken pieces, sauce and mix thoroughly. Sprinkle pepper, salt and add mix well. Remove from heat when you get desired consistency. Garnish well will green onions and ginger julienne. Serve hot.
